Baked 3 Cheese Macaroni
2 cups uncooked macaroni noodles
1-2 chopped onions
1-2 Tbs margarine for sautéing onions
½ cup shredded Cheddar cheese (mild or sharp)
½ cup shredded Mozzarella cheese
½ cup grated Parmesan cheese
1½ cups milk
½ cup bread crumbs (or stove-top stuffing)
Preheat oven to 350 degrees.
In a medium pot, boil macaroni in water until tender, drain and set aside. In a medium saucepan, sauté the onions in the margarine until they are tender and clear.
In a 3-quart greased casserole dish, stir together the macaroni and milk. Sprinkle with the cheese and onion, then stir it all together. Sprinkle the bread crumbs on top.
Cover and bake at 350 degrees for 40 minutes. Serves six to eight.
Almond Bars
CRUST
1 cup butter
2 cups flour
½ cup powdered sugar
FILLING
8 ounces cream cheese, softened
2 eggs, beaten
½ cup sugar
1 tsp almond extract
FROSTING
1 ½ cup powdered sugar
¼ cup butter, softened
1 1/2 tablespoon milk
1 teaspoon almond extract
Preheat oven to 350 degrees.
For crust, cream butter, flour and powdered sugar and pat into even layer in 9X13 pan. Bake at 350 for 20 minutes.
For filling, beat together filling ingredients and pour over crust while it is still hot. Bake 15-20 minutes, or until fillilng is set in middle. Remove from oven and cool.
For frosting, whisk together frosting ingredients and spread evenly over the baked, cooled pan of bars. Cut into bars.
Makes 20 bars
